What is Chorizo?

Are you looking for a new salty and savory treat? Then you need to try chorizo. Chorizo is found in cultures around the world, ranging from the plains in Spain to the Mexican coasts, but perhaps the best chorizo is found in Argentina. So what exactly is Argentinian chorizo?

What is Argentinian Chorizo?

Argentinian chorizo is a pork sausage that is enjoyed throughout all of Argentina. The delicious delicacy is typically the centerpiece of a traditional ‘asado’ barbeque platter or enjoyed on two pieces of bread in a choripan sandwich. The pork sausage is typically flavored with a delicious mix of garlic, wine, and paprika, creating a complex yet comforting flavor profile. Chorizo is typically smoked or grilled, although it can also be pan-fried.

Is Argentinian Chorizo the Same as Mexican Chorizo?

Chorizo is a food that spans the globe, but are all of the different types of chorizo more or less the same? The answer is no. Mexican chorizo is different from Argentinian chorizo in a few key ways. While Argentinian chorizo is seasoned with wine, paprika, and garlic, Mexican chorizo is seasoned with vinegar and chile peppers, making it quite spicy. The spice in Mexican chorizo means that it is usually enjoyed as ground meat in eggs or other dishes, while Argentinian chorizo is typically eaten in sausage form.

Where Did Chorizo Originate?

Chorizo originated in Catalonia, located in Spain. While we have already highlighted chorizo’s presence in Mexico and Spain, it can also be found in Portugal, Panama, the Philippines, Puerto Rico, and other parts of South America.

How Do You Eat Chorizo?

Chorizo is delicious, so how is it best enjoyed? There are a two different options for chorizo:

Choripan

Choripan is a chorizo sandwich, in which a chorizo sausage is put between two slices of bread. The sandwich usually also includes lettuce, tomato, and mayonnaise, making for a delicious and refreshing lunch.

Chorizo with Chimichurri

Chorizo can also be eaten with a fork and knife, dipping the sausage in chimichurri. Chimichurri is a delicious sauce that typically features garlic, olive oil, vinegar, parsley, and chili pepper flakes. The sauce is great on top of all types of meat, including steak, adding a delicious flavor that mixes very well with the fat of the meat. Chorizo is typically featured on an asado platter.

What is an Asado Platter?

Asado is Spanish for “Roast” and an asado platter is a tray full of a variety of different roasted or grilled meats. Chorizo is almost always on a true Argentinian asado platter, and some other featured foods include steak, chicken, and pork. This is a staple of any Parrilla in Argentina. At Puerto La Boca, we serve an asado platter called Parrillada El Conventillo that features chorizo as well as morcilla, asado de tira, pollo, entrana, picana and mollejas.
